Fez’s cuisine derives from the 13th century Arabo-Andalusian cooking. Typical Fassi dishes include tajines and couscous with plenty of fruit, vegetables and spices. As the cultural and spiritual centre of Morocco, its medina is one of the best-conserved historic towns of the Arab-Muslim world filled with many small stalls and shops selling vast varieties of food.
Set within Africa’s largest medina’s ancient walls, Palais Amani is an immaculately restored luxury riad with a panoramic roof terrace and mosaic-tiled hammam. The shaded courtyard is fragrant with jasmine and citrus ideal for sipping a glass of mint tea before embarking on a cookery masterclass with the chef.
Palais Amani has a constantly changing menu infused with the heady flavours and heritage of Moroccan cuisine, with regular delights including tasty lamb tajines, slow-cooked leg of duck with prunes and saffron-infused monkfish cassoulet. The hotel also offers a tapas menu available from 11am offering Moroccan flavours in a more modern format.
Start the day with breakfast in the courtyard to the sound of birdsong, an unhurried three-course affair. Perfectly placed to plunge guests into the local souks to explore the rich cultural heritage, Palais Amani offers guests street food tours guided by the hotel’s chef. Seeking out the traditional ingredients that make Fassi food so distinctive is just half the fun before heading back to the hotel for a two-hour cookery master class learning how to create typical local dishes which guests can then recreate at home.

The three-night Flavours of Fez break including a guided street food tour, baking workshop, daily breakfast, lunch and tea on each day, one massage each, with a multi-course Fassi banquet on the last day, costs Euros 1,300€ based on two people sharing.
