Palais Amani is located in the walled medieval city; the Medina (Old Town) in Fez. The Medina is home to many food markets selling ingredients ranging from spices, almonds, couscous, fishes, meats, olive oils etc. that are all essential for Moroccan cooking. 2014 sees the launch of new ‘From Medina to Plate’ Cuisine Breaks which include souk foodie tours and cookery classes.
Palais Amani, an art deco riad which has been completely refurbished offering 14 suites & bedrooms are introducing the flavours of Morocco with these new cuisine adventure breaks. After a traditional Moroccan breakfast guests embark on a journey of discovery around the local souks accompanied by the head chef. Guests are invited to seek out traditional ingredients which will later be used within the cookery class. Fez is full of history and still maintains an authentic Moroccan feel, throughout the tour the chef will also showcase some hidden gems that tourists may not find in the vast Medina.
With all the ingredients gathered it is back to Palais Amani for a two hour cookery demonstration with the head chef. Here guests will learn how best to use Moroccan ingredients to create traditional dishes using modern presentation. Guests then sit down to enjoy their own lunch on the stunning terrace. The next day, guests are invited to improve their tajine techniques and also with the head chef create Moroccan bread and sweet delicacies which are later served with real mint tea.
By the final day guests can sit back and enjoy Palais Amani’s restaurant and experience more inventive Moroccan cuisine. Dishes include slow cooked beef with wild artichokes, monkfish tajine with peppers and saffron or the infamous chicken pastille to name a few. Combining Arab, Berber, Moorish and Mediterranean influences, the food at Palais Amani is a marriage of ancient ways of cooking with a modern touch of serving.
Palais Amani is built in the traditional riad style where the focus is turned inwards. The result is an ambiance of exclusivity and enhanced relaxation. A large garden at the centre of the palace makes way to bedrooms and suites over two floors, to a restaurant, a salon & library and a hammam. As guests climb to the top of Palais Amani they are greeted on the roof terrace by a spectacular 360⁰ view of the ancient city and surrounding mountains beyond. From this height guests can see where their foodie journey started.

The ‘From Medina to Plate’ Cuisine Breaks include a three night stay in a classic room with an upgrade on arrival (subject to availability), a full day Medina tour with cookery class, a baking workshop, a traditional Hammam Duo, a Grande Finale 6 course gastronomic dinner and daily Moroccan breakfast. This package is priced from €1500 based on two sharing for three nights.
A shorter overnight experience is also available including a Medina tour and cookery class followed by a 6 course gastronomic dinner and a traditional Hammam Duo is priced from €420 based on two sharing per night and also includes breakfast.
