The Stafford London Unveils New Modern British Menu in The Lyttelton Restaurant

With the changing face of St James’s, The Stafford London which occupies 16-18 St James’s Place has unveiled a new Modern British menu in its Lyttelton Restaurant available daily for lunch and pre-theatre. The menu highlights British dishes and changes with season. Ingredients are sustainable, organic and prepared creatively to showcase the very best Britain has to offer from farm and land to plate.

Starters include Cauliflower soup with Stilton bonbon and the Dorset crab and mango parcels, Lime oil, coriander salad and Black rocks. In all, there are five starters to choose from. In addition there are a selection of five salads to enjoy including The Stafford Caesar Chicken or Prawn salad. Mains include a choice of three Meat dishes and four Fish dishes. Meats include Roasted lamb rump; Crispy lamb shoulder, White asparagus, pea mint purée and the Suffolk pork fillet; Spring vegetable, Broccoli purée, Potato croquette. Fishes include Dorset crab; 64° poached organic duck egg, Hollandaise sauce and the Charred halibut loin; Oyster tempura, Horseradish emulsion, Compressed Mayfair gin cucumber. Five side dishes are also available to accompany the meal.

Desserts include old favourites given a modern touch such as the Deconstructed lemon meringue pie, Lemon marshmallow and the Banana Soufflé; Passion fruit sauce, white chocolate and vermouth sorbet. Teas and coffees are included with the three course menu.

Executive Head Chef Carlos Martinez uses the finest selection of British produce in The Lyttelton Restaurant. He has worked at many Michelin starred restaurants and as Head Executive Chef of Cliveden’s three restaurants he retained their Michelin Star after Daniel Galmiche’s departure who he had worked with for some time. Originally from Valencia, Spain, he began helping at his grandmother’s restaurant at a very young age. It was her encouragement that motivated Carlos to pursue a career as a chef. Carlos spent time working across Europe including in Fribourg, Switzerland, with Chef Pierrot Ayer, from whom he learned modern techniques.

The Lyttelton Restaurant offers 45 covers in a spacious elegant environment. The decor includes an ivory, purple and grey colour palette with a stunning custom-designed chandelier at the centre of the room.

The Stafford London is fortunate to have Master Sommelier Gino Nardella overseeing its 380-year old Wine Cellars. Gino’s experience is vast, from his childhood spent on the family owned vineyard in Southern France to over 40 years accumulated experience as a Sommelier. The wine list at The Stafford London is extensive and covers all of the Old world and much of the New world. 17 wines are available by the glass.
