The Vineyard, the UK’s wine hotel in Berkshire, encourages diners to create their own wine and food tasting according to their palate. Home to 30,000 bottles of wine in its cellars, all tastes at The Vineyard are catered for. Guests are invited to select between four and five dishes for dinner and then pair these with a different wine to match each dish. Discovery is key here and the sommelier team at The Vineyard can guide diners palates suggesting everything including grand wines, balanced wines, vintage wines or even the latest grape variety.

A unique collection of wines demands an extraordinary chef, Daniel Galmiche has created a selection of menus that blend fine dining and fine wines. The menu includes:
o Cream of leek and potato velouté, smoked pancetta
o Carpaccio of Cornish lobster, artichoke, chervil
o Guinea fowl and parsley terrine, orange, chicory, almonds
o Hand dived scallops, peas, goats’ cheese curd, truffle
o Fillet of Cornish cod, Heirloom tomato, ratte potato, chive
o Fillet of Scottish salmon, aubergine, kumquat, lime
o South Coast brill, celeriac, chow chow, watercress

o Corn fed Tidenham duck breast, spring carrot, wild rice
o Cornish lamb rump, nettle, morels, new season onion
o Strip loin of veal, baby artichokes, carrot , wild asparagus

o Citrus rice pudding, honey cream, iced kalamansi
o White chocolate and passion fruit terrine, exotic purée, coconut
o Poached peach, oatmeal biscuit, beer jelly and ale ice cream

o English rhubarb savarin, poached in thyme, hazelnut cream
o Chocolate, salted caramel, cacao nibs, fromage blanc sorbet
o Seasonal farmhouse cheese platter, quince, fennel bread

Four dishes are priced from £65.00 per person with matching wines starting from £7.00 per glass per dish. A selection of other menus are also available including the famous ‘Judgement of Paris’ menu.

For those seeking more in depth wine and food pairing knowledge this is covered on WSET (Wine and Spirit Education Trust) courses that run every month at The Vineyard. These full day courses are available throughout the year and include an industry exam and certificate. The following courses are scheduled for Monday 18th August, Sunday 14th September, Sunday 19th October, Sunday 23rd November and Sunday 7th December.

A ‘Taste of Vineyard’ break is available and is the ideal way to indulge the palate and refresh the spirit! The overnight stay includes a seven course dinner with two matching wines per course. The stay also includes breakfast the next day and use of the boutique spa including indoor swimming pool. This break is priced from £295.00 per person per night.

Guests enter a world of wines as they arrive at The Vineyard in Berkshire. As guests walk through the doors they will instantly notice the glass floored wine vault holding almost 1,000 bottles of wine from around the world. Wine tours can be organised before dinner to learn more about wines ahead of the pairing.
