Sitting behind glass watching chefs is so last decade! Ynyshir Hall have unveiled a new Chef’s Table within the kitchen where Gareth Ward and his team of chefs work. Up to eight guests will have front row seats into the preparation of award winning food. Gareth Ward achieved his first Michelin Star at this award winning hotel in Wales in 2014. The Chef’s Table which launched this March has been designed to allow guests to use their senses and see, taste and smell the wide variety of ingredients that go into the ‘Culinary Adventure Menu’ comprising 11 courses as selected by Gareth Ward.
Gareth has been granted complete freedom by hotel owners Joan and Rob Reen and his innovative approach to cuisine has attracted many new customers to Ynyshir Hall’s 25-cover restaurant. The addition of a Chef’s Table will allow guests to interact with Gareth and enjoy the action from the heart of the kitchen. The kitchen has been designed by C & C Catering Equipment Ltd who are a leading British company supplying and installing catering equipment across the hospitality sector. The design features a finish in black granite and stainless steel. The actual table is made from a Yew Tree by a local Welsh carpenter and the chairs are made from antique leather. The floor has been rescued from an old building at Ynyshir and is original Welsh slate.
The Chef’s Table at Ynyshir Hall can be booked for dinner Monday – Saturday. A sample of some dishes on the ‘Culinary Adventure Menu’ include; Not French Onion Soup, Mackerel Sweet & Sour, Salmon Belly Cream Cheese – Rye – Pickle, Heritage Potato – Yeast – Egg – Bianchetto truffle, Welsh Wagyu, Cauliflower Cheese and Parsnip Porridge among others. Each dish can be paired with a wine selected by the sommelier and before the Chef’s Table experience begins each guest is invited to start the dining journey with a glass of Laurent Perrier Champagne.
The Chef’s Table is priced from £115.00 per person based on the 11 courses and includes a glass of Laurent Perrier Champagne.
Ynyshir Hall is located between the sea and mountains close to Cardigan Bay off West Wales. The hotel was once home to Queen Victoria and guests can still admire trees she planted within the stunning grounds which share their border with the RSPB Ynys-hir Reserve. Guests can further explore the surrounding area and spend time at Artists Valley which inspired Led Zeppelin’s Stairway to Heaven or head to the deserted golden sands of Borth Beach or indulge in some antique shopping in the pretty village of Machynlleth, the new antiques capital of Britain.
2014 was a record breaking year for Ynyshir Hall. Not only did Gareth Ward win a Michelin Star but he was also awarded ‘Chef to Watch 2015′ by The Good Food Guide. This guide also included Ynyshir Hall in its Top 50 Restaurants for 2015 whilst the hotel went on to win one of the most prestigious awards in the travel industry; AA Hotel of the Year – Wales 2014-2015. In a year that saw Joan and Rob Reen celebrate 25 years at Ynyshir Hall, Joan went on to win Relais & Chateaux Woman of the Year 2015 at the annual Relais & Chateaux congress held in Paris. It was also a significant and precious year as Joan Reen recovered from cancer treatment whilst very much maintaining a visible presence at her beloved Ynyshir Hall. Ynyshir Hall and its 10 bedrooms became one of the most talked about and celebrated hotels in the UK.
Ynyshir Hall’s succulent seafood comes from Cardigan Bay — with lobsters, crabs and shrimp landed at Aberystwyth and Borth. And there is exceptional wild salmon and sewin in the local rivers. Venison and wild game are in abundance, Ynyshir Hall has tender-sweet Welsh lamb along with free-range chicken and Welsh Wagyu beef which is second to none. Pork is organic and bacon is hand-cut for breakfast with sausages prepared to the hotel’s own recipe. The kitchen garden produces wonderful fruit, vegetables, herbs and salads. Gareth collects wild foods such as mushrooms, samphire, wood sorrel and wild garlic from the surrounding countryside— all absolutely delicious thanks to the purity of the local soil, water and air.
